I've used the following patterns below for basic hats and mittens for toddlers and children.

Use worsted weight yarn for the main section
Size 7 knitting needles
Gauge of 4" = 20 st/26 rows
Fits heads of 12.5-20" around
And you would cast on 90 stitches.
Granted, you might need to adjust that number based upon your needle size/gauge/yarn. (I don't know your needle size nor how loose/tight you knit nor the size yarn for the main part).
I know this sounds weird, but I personally wouldn't cast on with the fun fur and then switch to the main color. Instead, I would use whatever yarn you are using for the main section (e.g. wool, cotton, acrylic) and make the hat 2" less than what you were planning. After binding off and finishing the main section, then I would get my fun fur, and pick up the (e.g. 90) stitches along the bottom edge and start working with the fun fur for the 2" cuff. Fun fur adjusts nicely to whatever gauge you already have established on the main section, plus by doing it this way, it will form a nice soft "seam" for proper cuffing and folding.
