Project Instructions

  • 1
Project time does not include neither the baking the cake, cooling the cake or letting the piped rolled icing set.
  • 2
Bake and cool cake following package instructions. Prepare cake by lightly covering with buttercream icing.
  • 3
Knead fondant until it is a workable consistency. If fondant is sticky, knead in a little confectioners' sugar. Tint 30 ounce of fondant Rose and cover cake; smooth with Fondant Smoother. Roll out White fondant 1/8 inch thick and cut out cross using top of pan as pattern (sections are 2 inch wide). Position cross on cake, securing with damp brush.
  • 4
Lightly dust your smooth work surface or the mat and your rolling pin with confectioners' sugar to prevent sticking. Roll out fondant sized to your cake. To keep fondant from sticking, lift and move as you roll. Add more confectioners' sugar if needed.
  • 5
Gently lift fondant over rolling pin or slip cake circle under fondant to move; position on cake.
  • 6
Shape fondant to sides of cake with smoother. (Tip: the smoother is recommended, because the pressure of your hands may leave impressions on the fondant.) Beginning in the middle of the cake top, move the Smoother outward and down the sides to smooth and shape fondant to the cake and remove air bubbles. If an air bubble appears, insert a pin on an angle, release air and smooth the area again. Use the straight edge of the Smoother to mark fondant at the base of cake. Trim off excess fondant using a spatula or sharp knife. Your cake is now ready to decorate.
  • 7
Cut lattice strips using ribbon cutter/embosser with 2 straight-edge wheels and 1/4 inch spacer. Position strips diagonally on cross, spacing 1/2 inch apart. Secure with damp brush. Trim off excess with a sharp knife as strips are positioned.
  • 8
Using royal icing, pipe tip 3 dots on lattice strips. Let dry 1 hour.
  • 9
Roll 1/2 inch flattened balls of White fondant and place in spaces between lattice, securing with damp brush. Using a dry brush, brush white areas of cake top with Pearl Dust.
  • 10
Roll 1/2 inch balls of Rose fondant and attach for bottom border with damp brush.
