Wilton Champagne Meringue Cookies
The crisp, effervescent nature of champagne is captured in a delicate cookie that has a slightly chewy inside. It's a match made in baking heaven. 1Preheat oven to 250°F. Prepare cookie pans with parchment paper.
2In large bowl, whip 1/4 cup meringue powder and 1/2 cup water with electric mixer on high speed until soft peaks form. With mixer running, add 5 drops Crisp Champagne Flavor and gradually add 1-1/3 cups granulated sugar. Whip to stiff peaks. Add White icing color, and whip until well combined, scraping down bottom and sides of bowl with spatula as necessary.
3Fill decorating bag fitted with tip 1M with meringue mixture from previous steps; pipe 2" diameter swirls onto parchment-lined cookie pans, spacing 1" apart.
4Bake 45-50 minutes or until outsides of meringues feel firm and crisp. Cool completely on pan. Peel cooled meringues off of parchment paper.
Makes about 4 dozen cookies.
