Wilton Almond Snowball Cookies
No fighting with these snowballs. Whip up a wintertime treat any time of the year using just a few simple ingredients.

- Time:about an hour
1Prepare batter: Preheat oven to 325°F. Line cookie sheets with parchment paper. In large bowl, beat 4 sticks unsalted, softened butter and 1 cup granulated sugar with electric mixer until light and fluffy. Add a teaspoon of pure vanilla extract and mix well. Add 3-1/2 cups flour and 2 cups ground almonds; mix with electric mixer on low speed until dough forms. Roll dough into 1" balls; place 1" apart on cookie sheets.
2Bake cookies: Bake 20-25 minutes or until bottoms are golden brown. Remove to cooling grid; cool 5 minutes. Roll warm cookies in confectioners sugar; cool completely. Note: project time does not include this baking and cooling time.
Makes about 8 dozen cookies.
