Wilton Applesauce Spice Cake

Project Instructions

    Prepare cake batter. Preheat oven to 325°F. Spray pan with vegetable pan spray; set aside. In a bowl, combine 3 cups of all-purpose flour, 1/2 teaspoon cloves and 1 teaspoon of each of the following: baking soda, baking powder, cinnamon and salt. Set aside. Cream 1 cup (2 sticks) softened butter and 1-3/4 cups granulated sugar until light and fluffy. Add 3 eggs (one at a time), beating well after each addition. Add flour mixture and 1-3/4 cups applesauce to butter mixture alternately, starting and ending with flour mixture. Mix just until combined. Fold in 1 cup chopped walnuts and 3/4 cup golden raisins. Pour into prepared pan.

    Make icing. Stir 6 tablespoons milk into 2-1/2 cups confectioners sugar. Add 1 teaspoon vanilla extract. Set aside.

    Bake cake. Bake 50-60 minutes or until toothpick comes out clean. Cool 15 minutes in pan, invert onto cooling grid; cool completely. Note: project time does not include this baking and cooling time. Drizzle cake with icing and top with additional walnuts.

    Makes about 12 to 16 servings.
