Wilton Brush Embroidered Snowflake Cookies

Project Instructions

    Make cookies: One day in advance of serving cookies, bake and cool them on the grid following recipe instructions.

    Prepare colored royal icing: One day in advance of serving cookies, beat 6 tablespoons meringue powder, 8 cups confectioners sugar and 10 tablespoons warm water until icing forms peaks (7-10 minutes at low speed with a heavy-duty mixer, 10-12 minutes at high speed with a hand-held mixer). Thin half the icing to flow-in consistency (add 1 teaspoon water per cup of royal icing. Use grease-free spoon or spatula to stir slowly. Add 1/2 teaspoon water at a time until you reach proper consistency.) Then Use Color Right base colors and QuickCount color formulas to tint White icing in the following shades:
    Periwinkle Blue: 2 cups White icing + 3 B + 3 P
    Ice Blue: 2 cups icing + 1 BK + 2 B
    Deep Blue: 2 cups icing + 27 B + 6 R + 5 P

    Prepare White royal icing: Also one day in advance of serving cookies, beat 2 tablespoons meringue powder, 1-1/3 cups confectioners sugar and 1-2/3 tablespoons warm water until icing forms peaks (7-10 minutes at low speed with a heavy-duty mixer, 10-12 minutes at high speed with a hand-held mixer).

    Decorate cookies: Fill 3 decorating bags with tip 3 and full strength icing. Outline cookies and let dry for 15 minutes. Thin remaining tinted icing and flow in. Let dry 8-12 hours. Fill decorating bag with tip 2 and White icing. Outline cookies, about 1/4" from cookie edge. With a damp brush, drag outlines toward center. If desired, repeat outlining a smaller shape inside the first; drag outlines toward center. Pipe tip 2 dots and outlines, if desired. Let dry 3-4 hours.

    Makes about 36 cookies.
