Wilton Candy Cane Brownies

1Make brownies.Preheat over to 350°F. Spray 9 square baking pan with vegetable pan spray. Line pan with 9 x 14 strip of parchment paper in bottom of pan, allowing ends to hang out of sides. In a bowl, combine 1 cup all-purpose flour, 1/2 teaspoon baking soda and 1/4 teaspoon salt. In microwaveable bowl, combine 1 stick butter and 1 cup semi-sweet chocolate chips. Heat at 50% power 1-2 minutes or until chocolate is completely melted; stir until smooth. In another bowl, beat chocolate mixture and sugar with electric mixer until well blended. Add three eggs, one at a time; beat until incorporated. Add 1-1/2 teaspoons vanilla extract. Add flour mixture. Chop 3 oz. of Candy Melts and fold them into the mixture. Spread batter in prepared pan. Bake 35-37 minutes or until toothpick inserted in center comes out clean. Cool in pan completely. Cool and remove from pan. Note: project time does not include this baking and cooling time.
2Prepare icing. Beat 1/2 cup solid vegetable shortening and 1 stick butter in a large bowl with electric mixer until light and fluffy. Sift 4 cups of the confectioners sugar and gradually add, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. When all sugar has been mixed in, icing will appear dry. Slowly add 3 tablespoons milk; beat at medium speed until light and fluffy. Melt 7 oz. of Candy Melts and add them to the mixture. Beat until well combined, scraping bottom and sides of bowl often. Remove cooked brownies from pan and spread icing over brownies.
3Decorate brownies. Chop remaining package of Candy Melts. Sprinkle over brownies. Cut brownies into 2 squares. Cut and serve.
Makes about 16 brownies.
