- Time:about an hour
1Prepare dough. Preheat oven to 375°F. In a large mixing bowl, cream 1-1/4 cups butter, 1 cup granulated sugar and 2/3 cup brown sugar at medium high speed until light and fluffy. Add 2 large eggs, one at a time, beating well after each addition. Add 1 teaspoon clear vanilla extract. Sift together 2-1/2 cups flour, 2/3 cup cocoa, 1/2 teaspoon baking soda and 1/4 teaspoon salt. Add flour mixture gradually and beat well.
2Shape cookies. Shape dough into small log and place in cookie press. Press cookie onto cool ungreased cookie sheets.
3Bake cookies. Bake 10-12 minutes or until edges are light golden brown. Cool 2 minutes on cookie sheet on cooling rack. Remove from sheet; cool completely. Note: project time does not include this baking and cooling time.
Makes about 5 dozen cookies.
