Wilton Easy Layers Dark Chocolate Orange Cake
If a day without chocolate is like a day without sunshine, then a day without this dark chocolate orange cake is like living in a cave underground. Seriously, it's just that amazing. 1Preheat oven to 350°F. Prepare Easy Layer Pans with vegetable pan spray. Then, in large bowl, beat cake mix, instant coffee, water, eggs, oil, and extract with electric mixer on low speed for 30 seconds. Scrape the bottom and sides of your bowl, and then beat on medium speed for two minutes. Divide batter evenly between pans, and then bake 16-18 minutes or until a toothpick inserted in the center comes out clean. Cool cakes in pans on a cooling grid for 10 minutes, then remove the cakes from the pans and cool completely on the grid. Note: project time does not include this baking and cooling time.
2For ganache: combine cream and chocolate in medium microwave-safe container. Microwave at half (50%) power for one minute; stir. Then microwave on 50% in 15-second intervals, stirring between each interval, until the chocolate is almost melted. Add the orange extract and stir thoroughly until ganache is smooth.
3For icing: beat butter and shortening in large bowl with an electric mixer until its light and fluffy. Add melted chocolate; beat until combined. Add confectioners sugar, one cup at a time, beating well on medium speed. Scrape sides and bottom of bowl often. Add milk, one tablespoon at a time, and beat on medium speed until light and fluffy.
4Assemble the cake: spread 1/4 of the buttercream on the top of your first cake layer, and then spread 1/4 of your ganache over the buttercream. Repeat with your remaining layers, leaving the sides of cake bare.
