Wilton Five Layer Carrot Cake
Anytime is a good time for carrot cake!
- Time:3 hours
1Project time does not include the time needed to cool cake nor advance prep time on the carrot curls.
2One day in advance, use peeler to peel carrots. Roll up about 8 to 10 peels; secure with toothpick. Place curls in ice water. Chill about 8 to 12 hours.
3Prepare batter following recipe directions. Divide batter among pans into five equal portions. Bake and cool cake layers in pan set according to pan package directions.
4Prepare cream cheese icing following recipe directions. Use tip 32, a cut disposable decorating bag and cream cheese icing to pipe elongated shells around bottom layer, from edge of cake to center. Stack second layer on bottom layer. Repeat piping shells and stacking remaining layers.
5Use tip 32, cut disposable bag and cream cheese icing to pipe elongated shells around top layer, 1/2 inch. from edge of cake to center. Pipe two more layers of elongated shells on top of the first layer. Use tip 32, a cut disposable decorating bag and cream cheese icing to pipe a rosette in center of shells, about 2 inch diameter.
6Remove toothpicks from carrot curls. Position curls and chopped pecans on cake top.
