- Time:about an hour
1Prepare dough. Crush enough vanilla wafers so that you have 2-1/2 cups worth. Toast and finely chop the walnuts so you have 1 cup of them. Then, in a bowl, combine the vanilla wafer crumbs, walnuts, 1 cup confectioners sugar and 1/2 teaspoon salt. Add 3 tablespoons honey and 1/4 cup + 2 tablespoons honey whiskey liqueur; stir to combine. If mixture looks dry, add water, 1 tablespoon at a time, until mixture holds together.
2Make cookies. Form dough into 1" balls and roll in a coating consisting of your desired amounts of cocoa powder, more cookie crumbs and confectioners sugar mixed together. Tip: Store in airtight container if not serving immediately. Re-roll in coating before serving.
Makes about 2 dozen honey whiskey balls.
