Wilton Lemon Bars
When life gives you lemons
-- we suggest you make some delicious lemon bars, invite all your friends over, and have a party! Great for shaking things up at the dessert table or cookie exchange too!

- Time:about an hour
1Prepare dough. Preheat oven 350ºF. In bowl, combine 2 cups all-purpose flour, 2 sticks softened, unsalted butter and 1/2 cup confectioners sugar; stir to form a soft dough. Press into bottom of 13 x 9 in. pan.
2Make bars & topping. Bake 22-25 minutes or until edges of crust are golden brown. In small bowl, whisk 4 eggs, 2 cups granulated sugar, 1 teaspoon baking powder, 1/2 teaspoon salt and 2/3 cup lemon juice until smooth. Immediately pour over hot crust. Return to oven and bake an additional 18-20 minutes or until edges are golden brown and center is set. Cool completely in pan on cooling grid.
3Presentation. Dust cooled bars with additional confectioners sugar. Refrigerate before cutting. Note: Project time does not include the baking and cooling times included in this recipe.
Makes about 40 bars.
