Wilton Pear Almond Mini Loaves

Project Instructions

    Prepare batter. In bowl, combine 2-1/3 cups all-purpose flour, 2 teaspoons baking powder and 1/4 teaspoon salt; mix well. In another bowl, beat 4 tablespoons (1/2 stick) softened butter and 2/3 cup firmly packed brown sugar until light and fluffy. Add 2 eggs (one at a time); add 1 teaspoon vanilla extract and 1/2 teaspoon almond extract. Alternate adding flour mixture and milk, mixing until just combined. Peel and finely chop 2 pears and stir them into the mixture. Divide batter evenly into prepared pan. Sprinkle 2/3 cup almonds on top of batter; press gently into batter.

    Make icing. Stir 6 tablespoons milk into 2-1/2 cups confectioners sugar. Add 1 teaspoon vanilla extract. Set aside.

    Bake cake. Bake 26-30 minutes or until toothpick inserted in center comes out clean. Cool in pan on cooling rack 10 minutes; remove from pan and cool completely. Note: project time does not include this baking and cooling time.

    Makes about 8 mini loaves.
