- Time:several hours
1Prepare pan & dough. Prepare 13" x 9" baking pan with vegetable spray. In a bowl, stir together the 16 oz. package of hot roll mix, yeast packet, 1/2 cup hot water, 1/2 cup pumpkin puree, 2 tablespoons softened butter, an egg and 1 teaspoon vanilla extract. Turn dough out onto a lightly floured surface and knead 5 minutes or until smooth. Let dough rest 5 minutes.
2Make filling. Stir together 6 tablespoons softened butter, 2 tablespoons granulated sugar, 2 tablespoons all-purpose flour and 1/2 teaspoon pumpkin pie spice in a bowl. Roughly chop half of the package of candy melts.
3Make cinnamon rolls. On a lightly floured surface, roll dough to a 20" x 12" rectangle. With spatula, spread filling evenly across dough. Sprinkle with chopped melts. Starting with 20" side, begin rolling the dough tightly, pressing edges to seal. Cut log into 12 pieces. Place rolls in prepared pan, cut side down. Cover loosely with plastic wrap and a cloth towel. Let rest in a warm area 30 minutes or until almost doubled in size. Remove towel and plastic wrap. Preheat oven to 375°F. Bake 16-18 minutes or until golden brown. Cool in pan on cooling grid 10 minutes. Note: project time does not include either the baking or the cooling time.
4Add topping. In medium microwave-safe bowl, combine remaining 1/2 package Candy Melts and 2 tablespoons heavy whipping cream. Microwave at half (50%) power 1 minute. Stir thoroughly until mixture is smooth. Spoon mixture over rolls; serve warm.
Makes about one dozen cinnamon rolls.
