Wilton Salted Caramel Whoopie Pies

1Prepare: Preheat oven 325°F. Lightly spray whoopie pie pan with vegetable pan spray.
Step A: In medium bowl, stir together 2-1/4 cups all-purpose flour and 1-1/2 teaspoons baking powder.
Step B: In large bowl, beat 1-1/2 sticks softened butter and 3/4 cup firmly packed dark brown sugar with electric mixer on medium speed until light and fluffy, about 3 minutes.
Step C: Add 1 egg and 1 teaspoon salted caramel flavor; beat until well combined.
Step D: Add flour mixture alternately with 3/4 cup milk, beating well after each addition. Mix until just combined.
Step E: Spoon about 2 tablespoons of batter into each cavity; sprinkle with sea salt if desired.
Step A: Bake 12-14 minutes or until the tops of whoopie pies spring back when touched.
Step B: Cool cakes in pan on cooling grid 5 minutes.
Step C: Remove from pan; cool completely on grid. Note: Project time does not include these baking and cooling times.
Step A: Beat 12 tablespoons softened butter in large bowl with electric mixer until creamy.
Step B: Add 1-1/2 cups confectioners sugar and eight drops salted caramel flavor; mix well.
Step C: Spread about 2 tablespoons filling onto one whoopie pie and sandwich with another.
Makes about 12 whoopie pies.
