Wilton Santa Fondant Cupcakes

These jolly-looking cupcakes styled in Santa'’s image are irresistible! Pre-colored fondant makes the cupcake toppers an easy project for young and old.

Project Instructions

    Make Santa topper at least one day in advance of serving cupcakes.
    Step A:
    For the face, roll Pink fondant 1/16" thick; use second largest circle cutter to cut a circle for each cupcake. Roll White fondant 1/16" thick and cut a circle with second largest cutter to cut a circle for each cupcake. Measure 1" from edge of White fondant; make second cut to create a half circle for the beard. Cover pieces and set aside. Reserve unused cut pieces.
    Step B:
    For the hat, take the remaining portion of White circle, and make a cut 1/4" from edge to create brim of Santa’s hat. For hat base, roll Red fondant 1/16" thick; cut a circle. Make a second cut, 5/8" from edge. For top part of hat, cut 1/4" from edge of remaining Red fondant. Roll 3/8" balls of White fondant for pom poms. Cover pieces and set aside.
    Step C:
    For nose, roll a 1/8" Pink fondant ball. For eyes, roll Black fondant 1/16" thick; cut two circles using the narrow end of tip 12. Roll White fondant 1/16" thick; use narrow end of tip 4 and cut two circles for eye highlights.
    Step D:
    For mustache, use wide end of tip 12 to cut a White circle; cut circle in half. Use tip to cut 1/4" from straight edge of circle.
    Step E:
    For eyebrows, roll 2 White logs 1/2" x 1/16" diameter.
    Step F: For Red mouth, cut a circle using narrow end of tip 12.

    Assemble topper. Use a damp brush to attach fondant pieces to Pink circle topper. Attach beard first. Add the hat base opposite the beard, then the smaller hat piece. Attach White hat trim and pom pom. Attach mouth, mustache, nose, eyes, eye highlights and eyebrows. Let dry overnight.

    Bake cupcakes. Prepare 4-1/2 cups of batter following recipe instructions. Line muffin pan with baking cups, then bake following recipe. Cool on the grid.

    Assemble cupcakes. Use a spatula to ice cupcakes, making a mound of icing on cupcake top. Place Santa topper.

    Makes about 24 cupcakes.
